Superfood Peanut Butter Granola


Hey Gypsy Friends!! I hope this Monday is treating you well, and if not, treat yourself well with this peanut butter, superfood granola. All of the ingredients in this recipe are considered "superfoods" and have amazing health benefits. I will be listing a couple of the benefits for each, but if you do a bit of research, you will see why this granola is beneficial.


Granola is one of my favorite things to snack on. There are so many different flavors and variations you can make. This particular granola has a peanut butter flavor. It is not too sweet and can really be topped on anything, my favorite is a fruit parfait for breakfast.

Before we get into detail about the recipe, let me give you some information on the superfood ingredients to encourage you to give this snack a try!

Chia seeds are rich in calcium, iron and protein, plus they are flavorless.

Sunflower seeds contain Vitamin C and reduce blood sugar!

Almonds add shine in nails and hair, plus they reduce inflammation.

Pink Himalayan salt supports our nervous system, regulates blood pressure and boosts bone strength.

Raw honey is powerful in antioxidants and promotes digestive health.

Coconut oil improves bowel movements, improve oral health and boosts energy.

Cinnamon fights fungal bacteria and lowers cholesterol.

The first thing you'll want to do is mix your dry ingredients.


Old Fashioned Oats - 3 cups

Sliced Almonds - 1/2 cups

Sunflower Seeds - 1/2 cups

Chia Seeds - 2 Tbsp

Pink Himalayan Salt - 1 Tsp


Simply put these in a bowl and give it a quick mix with a spoon.

Next, prepare the wet ingredients to be melted together.


Peanut Butter - 1 Cup

Coconut Oil - 1/4 Cups

RAW Honey - 1/4 Cups

Cinnamon- 1 Tbsp

Vanilla Extract- 1 Tsp


You can plop these all in a sauce pan on low heat. Mix them together for about 3 minutes, until the substance is a smooth, pour-able liquid.

Add the wet ingredients to the dry and mix until every piece is coated.

It is important that there are no dry ingredients without the liquid coating.

They will burn in the heat.


Press your granola onto a pan with parchment paper. You will want a nice thin layer so the granola will cook through.

In a preheated 400 degree oven, slide your pan inside and wait for about 15 minutes. After the 15 minutes keep a good eye on the pan until it is nice and golden brown.

Once the granola is out of the oven, let it cool completely before stirring or messing with it. This should take about 1-2 hours.

Finally, put your granola on top of a peanut butter and jelly strawberry parfait and indulge!
