Rosé Spring Salad

A fresh spring salad that is so easy, you'll have to try it out!


This delicious spring salad is so simple to make at home, I find it a bit hard to call it a "recipe." However, this combination of ingredients is so balanced and yummy I had to share.

The ingredients you see in the picture above is all you need to create this earthy and sweet salad. In my home we try to use spinach instead of other lettuces as our base. Spinach has twice as much protein, potassium, calcium, iron, and vitamins as any other leafy vegetable. Cherry tomatoes are the only other vegetable I use in this salad, but feel free to add other fruits/veggies with simple tastes like cucumber or fresh strawberries. I use dried cranberries in a lot of my salads because it adds a sweet taste and fun texture. Sunflower seeds are my new favorite salad ingredient because they are a small addition, but they pack so much nutrient value. Lastly, before the dressing, I sprinkle in some chia seeds.

The chia seed craze hasn't seemed to slow down and I am still a huge fan. If you can get fiber, protein and calcium from a small, tasteless seed, why wouldn't you add it to everything?

Growing up I was constantly eating sunflower seeds and I still love them now. In this spring salad the earthy sunflower seeds balances the sweetness in the dried cranberries, my new favorite combination! I can't wait to try it in other meals.

What really brings this entire salad together is the dressing. I love light and simple tasting salad dressings because I enjoy the ingredients in them. My husband, who enjoys thicker, more powerful tasting dressings even craves this salad for the dressing alone.

When we took our last trip to Trader Joe's we specifically looked at the salad dressings to see what new ideas came into our minds for dinner. Once I saw that they made a rosé tasting dressing I had to try it out. I have recently become a wine lover and try out as many new flavors as I can. (Please recommend me some new wine brands to try out) This dressing did not disappoint. It is an organic sunflower oil and rosé vinegar based with herbs like garlic, basil and oregano.

For this post I wanted to keep the salad simple with few ingredients. I also wanted to keep it vegetarian friendly. When I made this salad last time, which is why the bottle here is almost gone, I made it with herb grilled chicken and added fresh Parmesan cheese on top.
